Savoury and deep rather than sharp. \u003cstrong\u003eNot the delicate thing the name suggests\u003c\/strong\u003e, expect it stronger and sweeter than \"Kansai dashi\" sounds, though a minority still find it light.\u003c\/li\u003e\n\u003cli\u003e\n\u003cstrong\u003eHard, and deliberately so\u003c\/strong\u003e: sliced thick and fried slowly, so it breaks with a crack rather than a snap.
