peyoung-sichuan-mapo-yakisoba
Peyoung Sichuan Mapo Yakisoba Noodle Tray 123g

A tray of Japanese noodles you drain and toss through a mapo-tofu sauce: the Sichuan dish of tofu in a spiced bean sauce, here as a flavour on a noodle. Garlicky and savoury, with a gentle warmth rather than heat. Buy it for the garlic and the noodle; if you are buying it for Sichuan fire, this is the wrong tray: there is very little chilli burn in it, and almost no numbing.

On the pack: ペヤング 背脂風四川麻婆味やきそば (Peyoung).

What you're getting

The noodle is medium-thin and fried in lard, and it slurps easily. The sauce is thick and gloopy and clings to it.

Garlic is the loudest thing in the bowl: fried garlic chips scattered through it, and roasted garlic in the sauce itself.

There is tofu in the garnish, cut small enough to be easy to miss entirely. Don't buy this one for the tofu.

"Back-fat style" on the front describes the flavour, not an ingredient: there is no pork back fat in the tray. What the lard and pork oil add is savouriness and a toasty smell.

Allergens: wheat, sesame, soy and molluscs. Japan's rules have no mollusc category, so the oyster sauce sits in the pack's ingredient list, not its allergen box. Read that list before you rely on ours: on molluscs, ours is the fuller one.

Also on the label: there is meat in it, and the picture on the front does not make that obvious. The noodle is fried in lard and there is pork and chicken extract in the sauce.

//cdn.shopify.com/s/files/1/0824/1312/5858/files/peyoung-sichuan-mapo-yakisoba-tray-front.webp?v=1792028191
