About

Himemaru are small round rice crackers, fried and coated in a soy glaze with chilli, mandarin peel and flakes of aosa, a green seaweed. Buy them for a savoury handful with a little sweetness and some heat; if you want plain, unseasoned rice crackers, this is the wrong bag.

On the pack: 天乃屋の姫丸 (Amanoya no Himemaru). In Japanese, hime marks something small and cute and maru means round, so the name is roughly "little round one". The English ingredient list calls the aosa seaweed laver.

What you're getting

  • The pack rates the heat medium (中辛, chūkara), from chilli pepper in the seasoning.
  • Fried, not baked: crisp, and rich and oily the way fried crackers are, not light like a baked one.
  • Knobbly, bite-size balls: one goes in whole.
  • Not the same cracker as Kabuki-age, Amanoya's better-known fried cracker: Himemaru is round, bite-size and spiced.
  • Allergens: contains wheat and soy. The factory also handles peanuts and crustaceans, so traces are possible. Read the pack's own label before you rely on ours.
  • Also on the label: another Himemaru recipe carrying the same barcode adds bonito, a fish, to the seasoning. If you avoid fish, check the ingredient list for bonito.

Once the bag is open, clip it shut or keep the rest in an airtight container: in humid air rice crackers go soft.
