About

Ajitsuke nori is roasted seaweed seasoned with soy sauce, sugar and bonito (dried-fish) stock, cut into small pieces you eat straight from the jar or wrap around a mouthful of rice. It tastes salty-sweet and savoury, and the chilli in it is kept in the background. It is the everyday jar in Kanpy's tabletop range, made with Japanese nori: a step below the jars of nori from two named Japanese seas, the Ariake Sea and the Seto Inland Sea. Buy it if you want something to go with plain rice or a salty piece to pick at; if you want plain nori for rolling sushi, this is the wrong nori: the pieces are a tenth of a sheet, and seasoned nori cracks when rolled anyway.

味付けのり: ajitsuke nori, "seasoned nori". The big brush lettering on the front of the jar, 味のり, is its short name (aji nori).

What you're getting

  • Bonito, in plain words. Bonito stock is made from dried fish flakes; here it goes into the soy seasoning with a little kombu kelp.
  • One jar, no little packets. You take out one piece at a time, and with the lid shut and the drying sachet inside, the rest stays crisp.
  • Eighty pieces, eight sheets' worth. Each full sheet of nori is cut into ten small pieces.
  • The honest one: there is an added flavour enhancer. It is listed as amino acids etc.; if you avoid them, this jar is not for you.
  • Allergens: contains wheat (gluten), soy, crustacean (shrimp) and fish (dried fish flakes). Japan's chart has no fish category for these, so the fish sits in the pack's ingredient list (削り節, the dried fish flakes) rather than its allergen box: check the ingredients, not the chart; ours is the fuller list.
  • Also on the label: the small sachet in the jar is a drying pack, not food. Keep it in the jar and never throw it somewhere wet, because it can heat up.
Ingredients

Dried nori (Japan), seasoning liquid (soy sauce (contains soybean, wheat), sugar, dried fish flakes (frigate tuna, round herring), salt, kombu kelp, shrimp, chilli), flavour enhancer (amino acids etc.)

Our guide

How to eat it

Good to know

  • Put the lid straight back on after taking a piece: the longer and more often the jar sits open, the more damp gets in and the softer the nori goes.
  • If the drying sachet inside looks swollen, treat it as a warning sign, even before the best-before date, which is printed under the Japanese label as year and month (such as 2027.06).
  • If the nori goes soft before you finish it, turn it into a savoury avocado side: tear 8 pieces into a heatproof bowl with 2 tablespoons of water, 1 teaspoon of soy sauce and half a teaspoon of sugar, microwave at 500 W for 1 minute 30 seconds, stir, let it cool, then fold in one cubed avocado.
