About

Two sachets of garlic and chilli oil sauce that turn plain boiled spaghetti into Japan's packet aglio e olio (Italian garlic-and-oil spaghetti), with nothing to cook. It is strongly garlicky, properly hot and more savoury than the homemade version, and a sachet of fried garlic, parsley and chilli goes on top. Buy it if you like garlic loud and a real chilli bite; if you want a mild, buttery pasta, this is the wrong sachet.

ペペロンチーノ, peperoncino: Italian for chilli, and the name Japan uses for garlic, oil and chilli spaghetti.

What you're getting

  • How garlicky: very. The garlic is roasted and fried rather than raw, and it stays on your breath afterwards, so plan around who you are seeing.
  • How hot: there is chilli in the sauce itself as well as in the topping, so it cannot be made fully mild.
  • Not a copy of the Italian dish: it is more savoury than the olive oil, garlic and chilli you would make at home, because anchovy extract and savoury seasoning go into the sauce.
  • How much pasta: one sachet for 100 g of dry spaghetti, which is one serve, and the pack makes two.
  • Allergens: contains fish (anchovy). Read the pack's own label before you rely on ours.
  • Also on the label: there is fish in it: an anchovy extract in the sauce.

Our guide

How to cook with it

  • Cook 100 g of dry spaghetti per sachet and drain it well.
  • Stir one sauce sachet through the pasta straight away, on the plate while the noodles are still hot; there is no need to heat the sauce.
  • Scatter one topping sachet over the top; pick out the chilli pieces first if you want it milder.

Good to know

  • It also makes garlic fried rice: fry 50 g of chopped onion, add a beaten egg, then 200 g of cooked rice for a minute; turn the heat off before you stir one sachet through.
  • For a quick side, fry 180 g of mushrooms in a teaspoon of oil, turn the heat off, then stir one sachet through.

The maker

Where it comes from

  • S&B
  • Tokyo

S&B began in Tokyo in 1923, when its founder made the first curry powder produced in Japan. The letters stand for Sun and Bird, the company's mark since 1931.

Its stir-through spaghetti sauces started in 1988 with two roe flavours. Peperoncino, Japan's name for garlic and chilli oil pasta, is the line's take on an Italian dish, made the Japanese way with roasted garlic and a savoury seasoning.
