About

Twenty single-serve Japanese miso soups in one bag with 30% less salt per serve than the regular Shinsyu-ichi bag, each made in a bowl with boiling water and no cooking. It is a savoury miso broth made with a stock of bonito, other dried fish and kelp, with fried tofu, tofu, spinach or long green onion in it, and wakame seaweed in every bowl. Buy it if you want miso soup most days with less salt; if you need a miso soup made without fish, this is the wrong bag, because the stock is made from fish.

神州一味噌 お徳用20食 減塩 is the Japanese on the front. Shinsyu-ichi (shin-shoo-ee-chee) is the brand, 味噌 is miso, お徳用 means value size, 20食 means 20 servings, and 減塩 (genen) means reduced salt; 塩分30%カット on the badge means 30% less salt.

What you're getting

  • How it differs from the regular bag: the miso paste adds a soybean miso and a bonito flake powder, and carries less salt; the fillings and the method are the same.
  • Reduced, not low: it has less salt than the regular bag, but it is not a low-salt food.
  • Two sachets per bowl: every serving is a sachet of miso paste and a sachet of dried filling. All twenty pastes are the same, so any paste goes with any filling.
  • Five fillings to rotate: fried tofu (aburaage), wakame seaweed, tofu, spinach, and long green onion, four of each, as dried pieces that soften in the water.
  • Allergens: fish, soy and wheat. Our list is wider than the pack's own allergen chart: Japan's rules have no category for fish, so the pack names bonito and sardine in its ingredient list, not its allergen box. Read that ingredient list before you rely on ours: on fish, ours is the fuller list.
  • Also on the label: the stock is made from fish, and the miso paste also contains alcohol.

The maker

Where it comes from

  • Shinsyu-ichi
  • Nagano
  • Founded 1916

Shinsyu-ichi's story starts in 1916 at the Marutaka brewery in Suwa, Nagano. Nagano's old name is Shinshu, and the company sold its miso as Shinshu miso.

When it tried to register 信州一, "number one in Shinshu", the name was refused, because a place name cannot belong to one company. So in 1938 it registered 神州一 instead. It sounds exactly the same, but the first character changes, and 神州 is an old literary name for Japan, so the brand now reads "number one in Japan". In English it is spelt Shinsyu-ichi.
