About
Kagoshima-style ramen in a packet for one pan: straight noodles and a pork-bone (tonkotsu) soup with charred spring onion. Charred onion is one of the things ramen from Kagoshima, in Japan's south, is known for, and here it gives the soup a light, toasty edge. Buy it if you want an everyday pork-bone ramen for two that is easy to eat; if you want the strongest, heaviest shop-style broth, this is the wrong packet: some buyers found this one milder than they hoped.
On the pack: 鹿児島黒豚 とんこつラーメン. Marutai also makes a Hakata ramen in a packet of the same weight, so look for 鹿児島 (Kagoshima) in the name.
What you're getting
- How rich it tastes divides people: some call it rich, others milder than they expected.
- Kurobuta, Kagoshima's black pork, goes into the soup's pork extract; it is an ingredient, not a flavour of its own.
- The noodles are straight, dried rather than fried, and smooth with a firm bite. They cook in three minutes.
- Nothing comes on top. The pork, bean sprouts and greens in the picture are a serving idea; bean sprouts, sliced spring onion and a boiled egg from any supermarket are the easy additions.
- Allergens: contains wheat, milk, sesame, soy and mollusc (scallop). Japan's chart has no category for mollusc, so the scallop sits in the pack's ingredient list rather than its allergen box: check the ingredients, not the chart; ours is the fuller list.
- Also on the label: the soup is made with pork extract and pork oil, and also contains chicken. Milk and sesame are declared, though no single ingredient names them. Anyone who avoids pork or meat should skip it.
The packet holds two servings, as two bundles of noodles: one to cook now and one to save. Most of the salt is in the soup rather than the noodles, so leaving some of the soup behind cuts it down.

The maker
Where it comes from
- Marutai
- Fukuoka
Stick ramen has been Marutai's speciality since 1959. The Fukuoka company dries its noodles straight, in stick-shaped bundles, one bundle to a serving.
Its regional range names each packet after a place in Japan and that place's ramen; this is the Kagoshima one.
