About
A packet of Japanese ramen you cook in a pan: thin straight noodles in a pork-bone (tonkotsu) soup, finished with a sachet of black garlic oil. The oil is garlic fried black in lard and vegetable oil, then ground, and it is what ramen from Kumamoto, in Japan's south-west, is known for. It gives the soup a strong burnt-garlic flavour. Buy it if you like garlic and want an everyday ramen for two; if you want a thick, heavy pork-bone broth, this is the wrong packet.
On the pack: 熊本黒マー油 とんこつラーメン, with 熊本 (Kumamoto) large on the front. Mayu (マー油) is the Japanese name for the black oil.
What you're getting
- The black oil comes in its own sachet, one per serving, and goes in at the end. It is garlic oil, not sesame oil; the sesame on the allergen list is a little sesame oil in the soup.
- It smells strongly of garlic while it cooks, and the smell carries through the room. Not one to make in a shared office kitchen.
- The noodles are thin, straight and dried rather than fried. They cook in three minutes.
- Nothing comes on top. The egg, pork and greens in the picture are a serving idea; a boiled egg and sliced spring onion from any supermarket are the easy additions.
- Allergens: contains wheat, milk, crustacean (prawn), sesame and soy. Read the pack's own label before you rely on ours.
- Also on the label: the soup is made with pork extract, the black oil is made with lard, and it also contains chicken, gelatine and a seafood extract whose sources are not named. Anyone who avoids pork or meat should skip it.
Two servings in one packet: two bundles of noodles, each with its own soup and oil sachets, so you can cook one and keep the other. Marutai also makes a plant-based Kumamoto ramen in a 180 g packet; this is not that one.

Our guide
How to eat it
- For each serving, bring 500 mL of water to the boil in a saucepan.
- Add one bundle of noodles and boil it for three minutes.
- Turn off the heat.
- Stir in one soup sachet and one black oil sachet.
- Tip it all into a bowl.
Good to know
- For a stronger soup, use about 50 mL less water per bundle; the full 500 mL makes a lighter one.

Marutai, a Fukuoka company on Kyushu, Japan's southern island, has made stick ramen since 1959: straight noodles dried in long, thin bundles, one serving to a bundle.
This packet belongs to its range of regional ramens, each named after a place in Japan; Kumamoto's signature is the black garlic oil.
