About

A two-serving packet of Japanese miso (fermented soybean paste) ramen, made without any meat or other animal ingredients. Buy it if you want a savoury miso ramen with sesame and garlic and nothing animal in the stock; if you want a creamy, pork-style (tonkotsu) bowl, Itsuki's Kyushu packet in the same range is the one for that.

On the pack: 札幌みそ (Sapporo miso). Sapporo is the city in Japan's north the soup is named after, and the miso here is made from soybeans and rice.

What you're getting

  • The soup is miso powder with sesame oil, garlic, onion and kombu (kelp), plus a little pepper, chilli and ginger near the end of the list.
  • It contains MSG (flavour enhancer 621).
  • The noodles are smooth, straight and dried, in two separate bundles, and they boil for three minutes, not the two and a half that some of Itsuki's other packets take.
  • Nothing comes on top. The pork, egg, corn and bean sprouts in the picture are a serving idea: the pork would stop the bowl being vegetarian.
  • Allergens: contains wheat, soy and sesame. Made in a factory that also handles milk, egg, fish, crustacean and buckwheat. Read the pack's own label before you rely on ours.
  • Diet: the maker describes it as free of animal ingredients, so it suits vegetarians. It is not certified vegan, and the same factory handles milk, egg and seafood.

Itsuki makes this range only for shops outside Japan, so you won't find this packet on a Japanese supermarket shelf. The soup is salty: leave some in the bowl if salt matters to you.

The maker

Where it comes from

  • Itsuki
  • Kumamoto
  • Founded 1878

Itsuki Foods is a Kumamoto noodle maker, founded in 1878 on Kyushu, Japan's southern island. It first sent noodles abroad in 1954: a shipment of Kumamoto soba to Hawaii.

This ramen comes from a range Itsuki makes only for shops outside Japan. Every flavour in it is made without animal ingredients; this one is named after Sapporo, a long way north of where it is made.
