About

This is a bag of five packets of Japanese tonkotsu (pork-bone) ramen you cook in a saucepan, each with a soup powder and a small pork-oil sachet. The soup is a creamy pork-bone soup with garlic and pepper, and the very thin, straight noodle is non-fried and cooks in 90 seconds. Buy it for a quick tonkotsu with a firm, ramen-shop style noodle; if you want the thick broth of a ramen bar or a big bowl, this is the wrong bag.

On the pack: チャルメラ バリカタ麺 豚骨. Charumera (cha-roo-meh-ra) is the brand; barikata (ba-ri-ka-ta) is the word tonkotsu ramen shops use for a noodle served very firm; tonkotsu (ton-kot-soo) means pork bone.

What you're getting

  • A very thin, firm noodle. It is straight and dried, and unlike the noodles in the other Charumera bags we sell, it is not fried.
  • Boiled for the 90 seconds the maker gives, it is firm and springy, not crunchy, and it keeps softening in the hot soup, so have the bowl ready before it goes in the pot.
  • It is a smaller serve: each 82 g packet holds 70 g of noodle, against 90 g in the Charumera soy-sauce, salt and miso bags, so a big appetite may want two.
  • The second sachet is pork oil, which lifts the smell of pork and garlic in the bowl.
  • Allergens: contains wheat, egg, milk, crustaceans (shrimp), molluscs (scallop), sesame and soy. Japanese labels don't have to flag molluscs as allergens, so the pack names them only in its ingredient list (scallop extract). If you avoid them, look for them by name in the ingredients.
  • Also on the label: there is meat in it: pork extract and lard are in it, and the pack declares chicken as well. Anyone who avoids pork or meat should skip it. It is made on equipment that also handles buckwheat.

The toppings pictured on the bag are a serving idea: each packet holds the noodle and its two sachets, nothing else. It is made by Myojo Foods of Japan. A Charumera Barikata cup, or an older 415 g bag, is a different product.

Our guide

How to eat it

  • Bring water to the boil in a saucepan, the amount printed on the back of the packet as a number followed by ml, then add the noodle and boil it for 90 seconds.
  • Stir the soup powder and the pork oil into the noodle and its cooking water, in the pan or in your bowl: nothing is drained, the cooking water is the broth.

Good to know

  • Eat it straight away: the thin noodle keeps softening in the hot soup.

The maker

Where it comes from

  • Myojo Foods
  • Tokyo

Myojo first sold this bag in January 2016 as Non-fry Charumera Tonkotsu, the first non-fried packet noodle under the Charumera brand, made to bring the firm, thin noodle of a tonkotsu ramen shop home, and gave it the Barikata name in 2020. Charumera itself first went on sale in 1966 and turned sixty on 7 September 2026.
