Product information
About
This is a bag of five packets of Japanese miso ramen you cook in a saucepan, each with a soup powder and a small chilli sachet. The soup is a mild, gentle miso rather than a strong one, and the noodles are fried and medium-thick. Buy it for an easy everyday miso ramen; if you want a rich, punchy miso broth, this is the wrong bag.
On the pack: チャルメラ みそ. Charumera (cha-roo-meh-ra) is the brand; miso is fermented soybean paste, the base of the soup.
What you're getting
- A mild miso. The soup is gentle rather than punchy, so if you want a strong miso flavour you may find it thin.
- The second sachet is shichimi, a Japanese chilli blend with sesame, sprinkled on at the end, so you choose how hot it gets.
- The noodles are medium-thick and fried, thicker than the noodles in the Charumera soy-sauce and salt bags.
- The scallop sits in the background rather than tasting of seafood: it is worked into the noodle dough and the soup, alongside pork extract, ginger and garlic.
- Allergens: contains wheat, egg, milk, crustaceans (shrimp), fish (mackerel), molluscs (scallop), sesame and soy. Japanese labels don't have to flag molluscs as allergens, so the pack names them only in its ingredient list (scallop extract). If you avoid them, look for them by name in the ingredients.
- Also on the label: there is meat in it: the soup carries pork extract, and the pack declares chicken and gelatine as well. Anyone who avoids pork or meat should skip it. It is made on equipment that also handles crab and walnut.
The toppings pictured on the bag are a serving idea: each packet holds the noodle block and its two sachets, nothing else. It is made by Myojo Foods of Japan. Charumera's original flavour is soy sauce; this is its miso.

I never read the method, but making my second bag I happened to look, and learned for the first time that with Charumera the soup powder goes in the bowl and you pour the noodles' cooking water over it.
