Why we say this

Soy sauce is the flavour Charumera launched with in 1966, and this five-pack of it has been sold in Japan since August 1990.

About

This is a bag of five packets of Japanese soy-sauce ramen you cook in a saucepan, each with a soup powder and a small spice sachet. The soup is a clear, brown soy-sauce broth, savoury but not heavy, and the noodles are medium-thin and fried. Buy it for plain, old-fashioned shoyu ramen, the everyday kind many Japanese people grew up on; if you want a rich, creamy broth like tonkotsu (pork bone), this is the wrong bag.

On the pack: チャルメラ しょうゆ. Charumera (cha-roo-meh-ra) is the brand; shoyu (show-yoo) means soy sauce.

What you're getting

  • Soy sauce is the original Charumera flavour. It is the recipe the brand launched with in 1966.
  • The scallop sits in the background rather than tasting of seafood: scallop is worked into the noodle dough, and the soup carries scallop and clam extract.
  • The second sachet is a blend of spices, sprinkled over at the end, so you can use less of it or leave it off.
  • The noodles are medium-thin and fried, smooth and supple rather than chewy.
  • Allergens: contains wheat, milk, soy and molluscs (scallop and clam). Japanese labels don't have to flag molluscs as allergens, so the pack names them only in its ingredient list (scallop extract, shellfish extract). If you avoid them, look for them by name in the ingredients.
  • Also on the label: there is meat in it: the soup carries beef seasoning, and the pack declares chicken, pork and gelatine as well. Anyone who avoids beef, pork or meat should skip it. It is made on equipment that also handles egg and shrimp.

The toppings pictured on the bag are a serving idea: each packet holds the noodle block and its two sachets, nothing else. It is made by Myojo Foods of Japan. A shoyu Charumera bag of 92 g packets is a reissue of the old recipe, and the Charumera shoyu cup has its own noodle and toppings: both are different products from this one.

Our guide

How to eat it

  • Bring water to the boil in a saucepan, the amount printed on the back of the packet as a number followed by ml, then add the noodle block and boil it for the time printed beside it, a number followed by 分, the Japanese character for minutes.
  • Stir the soup powder into the noodles and their cooking water, in the pan or in your bowl: nothing is drained, the cooking water is the broth.
  • Sprinkle the small spice sachet over the top just before you eat.

The maker

Where it comes from

  • Myojo Foods
  • Tokyo

Charumera went on sale in September 1966 with this soy-sauce flavour and a separate spice sachet, and it sold so fast that the maker ran short of some ingredients. The brand turned sixty on 7 September 2026, and since September 2025 the scallop in its noodle, soup and spice has all come from Hokkaido, Japan's northern island.
